African Couscous Salad With Honey

This recipe is a great salad for a barbecue and works especially well with grilled meats. You could even use roasted vegetables if you wish.
Ingredients
- 800ml of good vegetable stock
- 400g of couscous
- 50g of sultanas
- 50g of currants
- A handful of mint, finely chopped
- 1 teaspoon of Haughton Honey
- 2 tablespoons of white wine vinegar
- The juice of one lemon
- 3 tablespoons of olive oil
- 50g of sun-dried tomatoes, in oil, finely chopped
- 1 red pepper, de-seeded and copped
- 1 yellow or green pepper, de-seeded and chopped
- 2 banana shallots, finely chopped
Instructions
- Pour the vegetable stock into a saucepan over high heat. Bring to the boil. Remove from heat and pour in the couscous, sultanas and currants. Leave to stand for about 10 minutes. Fluff the grains with a fork.
- Roughly chop the mint. To make the dressing, whisk together the vinegar, lemon juice, honey and oil in a bowl. Season with salt and pepper. Add to the dried tomato, peppers and shallots and toss to combine.
- Mix in the couscous, add the mint and serve.
Notes for the cook: if you have a fan-assisted oven then reduce the specified temperature in the recipe by about 15% ~ 1 teaspoon = 5ml and 1 tablespoon = 15ml ~ some ingredients are measured in cups and some equivalents are; 150g, 6oz (1/2 cup) = 120ml, 4fl oz
