This recipe is a great salad for a barbecue and works especially well with grilled meats. You could even use roasted vegetables if you wish.

Ingredients

  • 800ml of good vegetable stock
  • 400g of couscous
  • 50g of sultanas
  • 50g of currants
  • A handful of mint, finely chopped
  • 1 teaspoon of Haughton Honey
  • 2 tablespoons of white wine vinegar
  • The juice of one lemon
  • 3 tablespoons of olive oil
  • 50g of sun-dried tomatoes, in oil, finely chopped
  • 1 red pepper, de-seeded and copped
  • 1 yellow or green pepper, de-seeded and chopped
  • 2 banana shallots, finely chopped

Instructions

  1. Pour the vegetable stock into a saucepan over high heat. Bring to the boil. Remove from heat and pour in the couscous, sultanas and currants. Leave to stand for about 10 minutes. Fluff the grains with a fork.
  2. Roughly chop the mint. To make the dressing, whisk together the vinegar, lemon juice, honey and oil in a bowl. Season with salt and pepper. Add to the dried tomato, peppers and shallots and toss to combine.
  3. Mix in the couscous, add the mint and serve.

Notes for the cook: if you have a fan-assisted oven then reduce the specified temperature in the recipe by about 15% ~ 1 teaspoon = 5ml and 1 tablespoon = 15ml ~ some ingredients are measured in cups and some equivalents are; 150g, 6oz (1/2 cup) = 120ml, 4fl oz
